21 weeks today!

This pregnancy has went by so fast, I'm at the half way point now. which is exciting and scary all at the same time. Today I had a doctor's appointment for the baby. My OBGYN said baby looks great. I'm so glad with this baby my OB's office does ultra sounds every visit! with Madison I think I had 3 the whole pregnancy. As for me I'm feeling great these days... so much better than a few months ago. My family is going on a cruise in March.. Madison is going! she is excited! I'm not going to make this family trip the cruise line don't allow you to go unless you are 20 weeks are less. Oh well maybe next time :(   tonight I made this new recipe and it was really good I must say I have never had a real good Chicken Enchilada recipe until now! I sometimes like watching " 19 kids and counting" and they have a great recipe for Enchilada's.  It's simple and cheap to make. here is the the recipe. I cut recipe in half because it makes 20 enchiladas!

 Chicken and Rice Enchiladas

enchilada filling

5c cooked rice
1c sour cream
2c shredded cheese
2 cans of cream of chicken soup
1 can rotel
2t salt
2t pepper
2t onion powder
1can of chicken ( drained and shredded)



cheese sauce
2 cans of cream of chicken soup
1 can green chili's
2c shredded cheese
1 can of evaporated milk

Mix enchilada filling in a bowl. stuff filling in taco bread roll and place in a greased 9x13
dish. mix up cheese sauce and heat till hot. pour on top of enchiladas bake for 30mins on 375 yields 20 enchiladas
